We have yet to meet someone who doesn’t like pancakes, and there’s a reason for that.
Being so versatile and easy to cook, it’s a true breakfast staple, even though you’ll often find us happily munching a pancake on the go – a piece of homemade comfort while at work or running errands.
Just make sure you use the same cup or mug size for both milk and flour, and you’ll have the scent of warm pancakes spreading all over the house in no time.
ingredients (4 servings)
- 1 egg – whole, just the yolk, or just the white (check “tips”)
- pinch of salt
- 1 cup / mug of milk (or non-dairy drink of choice)
- 1 cup / mug of self-raising flour
- 1 tsp sugar (or other sweetener of your choice)
method
- Place a large non-stick frying pan on medium heat. While it warms up, prepare the pancake batter.
- Crack the egg (or add the yolk/white) into a large bowl, and season with a pinch of salt. Whisk it until the mixture becomes smooth.
- Add milk, flour, and sweetener (if using). Mix it all together until you have a consistent (but not dry) mixture. If needed, add more milk or flour to get the desired consistency.
- Place enough batter on the warm frying pan so that it covers the whole flat surface.
- Let it cook for a couple of minutes until air bubbles start to appear across the batter. Once the cooked side is golden, flip the batter with a spatula.
- When both sides of the pancake are golden, use the spatula to transfer it to a plate.
- Repeat steps 4, 5, and 6 with remaining batter.
